I’m in love with meringue frosting. It’s fluffy, it tastes really good, like flavored air and it’s super simple to make. I actually didn’t even realize it was a thing. I mean, I only knew of meringue on top of lemon meringue pie. Then I started making meringue cookies and I thought to myself, WOW! this would make a great frosting. Ingredients
- 4 egg whites
- 1 cup sugar
- 2/3 cup water
- 1/2 tsp cream of tartar
- 1 tsp vanilla or almond extract
- pinch salt

Instructions
- Separate egg whites from yolks. Make sure to do this in a separate bowl so you can be sure you don't get any yolks mixed in.
- In a small saucepan add the sugar, cream of tartar and water. Bring to a boil and the set aside while you prep the egg whites
- Add egg whites to the mixer and start mixing. Add in your favorite extract and a pinch of salt
- Once a few peaks start to form slowly add the hot sugar and water mixture. Continue to mix until you get stiff peaks.
