Let me introduce you to Goi Cuon aka fresh spring rolls. This is one of my favorite Viet recipes because it’s packed with a ton of fresh ingredients, ridiculously tasty and so simple to put together. I haven’t seen a menu at a restaurant yet where these aren’t listed as an appetizer option. The spring rolls are super popular and definitely have become an American staple just like pho and banh mi. It’s like a salad handroll or a healthy veggie burrito. The fillings are endless but my favorite combo is lettuce, rice noodles, Viet herbs, shrimp and cukes.
