This is such a fantastic side dish for summer. Okay, it’s a great side dish any season but summertime here in LA is hot and cucumbers are cool, refreshing, crisp and go great with a big ole juicy steak straight off the bbq. There are so many variations of this simple cucumber salad but this time we used fresh white peppercorns instead of black pepper and added pico limon for a bit of a kick.
What you’ll need :
2-3 Cucumbers
1/2 of a white onion
And then grab these ingredients for the vinegar mix :
1/2 teas. sugar, 3 tbsp water, 1/2 teas salt, 1/2 tsp. white pepper, 1/4 c. of vinegar, 1/2 teas dill, 1/4 c. water and 1/4 tsp. of pico limon.
These are just starting point measurements. Mix it. Taste it. Add a pinch of this or that if needed.
Slice up the cukes. If you leave the skin on make sure to wash the outside really well.
I like em sliced 1/4 thick so you get a bit of crunch with each bite.
Cut up 1/2 of a white onion into thin slices
Toss the vinegar mix in and gently combine
Don’t forget to do a little taste test! You can eat this right away or put it into the fridge for a few hours and serve cold. How do I like it? Cold!
