You know those food cravings that won’t go away and you quickly realize it’s just best to give in then to fight? Well, I get like that with spaghetti. I love spaghetti especially a rich meat sauce spaghetti with delicious spicy homemade meat balls topped with fresh herbs and parmesan. But when cravings take over and your tummy wants what it wants in 15 minutes you just gotta improvise. After looking through the pantry I found a can of spam and Hunts pasta sauce. BTW I always keep extra cans of spaghetti sauce specifically for these occasions and my can of luncheon meat is comparable to the active ingredients in a can of Spam and half the price. Now my taste buds were salivating at the thought of fried spam. Here’s what I came up with. Enjoy!
INGREDIENTS:
I forgot to add spaghetti to the ingredient list but right now is when you’ll want to get a pot, fill it with water and put it on the stove on high. When the water starts to boil drop in the spaghetti. You can add salt to the water to season up the noodles a bit.
For the mixture start by adding a few teaspoons of olive oil into a saucepan and sauteing the onions, green pepper and a few cubes of spam for about 10 minutes. The spam will start to brown and the onions and bell peppers will get soft.
Grab another skillet and take a few extra slices of spam and grill them up in oil making them sizzle on both sides (this is your garnish after you plate up the spaghetti. Think of the fried spam as your meatballs.)
Back to the saucepan with the onions, green peppers and cubed spam. Add a can of your favorite spaghetti sauce and bring everything to a boil then bring the heat down to medium and let everything simmer together for a few minutes.
While your saucepan is simmering strain the spaghetti noodles.
The final step is to add the spaghetti noodles to the saucepan with onions, green peppers, spam and sauce mixture.
Plate up the spaghetti and add a few slices of the fried spam to each plate.
