I like serving family style and letting everyone dig in and serve themselves. There’s something about creating platters that makes me feel all warm and fuzzy inside. It’s like…take a moment folks and LOOK at all this beautiful food (ohhh ahhh…gorgeous) ok… now GO…EAT! Yes, cooking and plating is extremely rewarding 🙂
Since this platter is filled with eggs, sausage and waffles and I wanted to give some tips on how to make the perfect omelet and how to get the most flavor out of your blueberries. Remember you can put anything on a platter. You can have a big bowl of steel cut oats and sides of bacon and fruit, you can have scrambled eggs with fruit and toast (slice up the toast into triangles. Why? because it’s more fun). You can also just have a fruit and cheese breakfast platter that everyone can dig into. I can go on and on but let me reel myself back in and get to the platter above.
Let’s start with the omelet.
â‹… Start with fresh eggs
â‹… Add a little bit of water to the mix before whisking. The water creates steam in the mix which makes them fluffy. What won’t make them fluffy? Over cooking the mix.
â‹… Choose up to three toppings. I always stick to the three topping rule so I don’t have too many crazy flavors going on. And if you use mushrooms make sure to saute them first to break down the fibers and bring out the earthy flavor. With this omelet I was trying out a shredded dairy-free cheese called Daiya. It didn’t feel or taste like real cheese but it melted like real cheese :-). It’s made from Tapioca flour so of course it will taste a little different but it’s a great alternative for people who can’t eat dairy.
â‹… Butter your skillet. Butter is not your enemy, just make sure you don’t use an entire stick of it because then it will become your thighs best friend. 1 tbsp per omelet is a good amount.
⋅ Once the butter gets to sizzling a bit you can add your egg mixture. Swivel the pan around so all the liquid runs into the skillet and cooks through. Make sure the bottom is cooked and the top is soft before you add your toppings, then add toppings in the middle.
â‹… Flip one side and then the other and let it cook for another minute of two.
â‹… Plate up the omelet with other goodies like sausages and waffles and fruit. Now, I have a little blueberry tip for you. Heat up the blueberries a bit before putting them on top of the waffles. Don’t cook them just warm them up. You can do this in a microwave for 30 seconds. This allows the juice inside to heat up. When you cut into the waffle/blueberry the juices run out and you get this burst of fruity tartness that you won’t get when the blueberries are cold. Enjoy and happy eating!
