I could eat noodle soup every single day for the rest of my life. One of my favorite types of noodle soups, besides anything Vietnamese, is Udon. I love the thick, soft & chewy texture. It’s one of those soups that you almost always have to take in a mouthful of noods followed by a spoonful of broth to get the ultimate flavor experience.
I was so excited when I opened my front door and saw my very own Fortune Noodle box. I love the new packaging and love that Chef Yaki is on the back of every bag. You know he was born in a bowl of udon. Sounds like heaven LOL! Fortune Noodle udon comes in 3 flavors; beef, chicken and mushroom. The noods on their own is good and the broth is pretty solid but I wanted to add more veggies, herbs and fish sauce to make it a heartier, healthier and tastier meal. For this recipe, I used the Fortune Noodles Mushroom Udon. I sauteed tofu and shiitake mushrooms in garlic and olive oil until everything was a crispy golden brown. Ahhhh so much flavor!

- 1 bag Mushroom Flavored Fortune Noodle Udon
- 1 cup Napa cabbage Chopped
- 1 cup Firm tofu Cut into cubes
- 1 cup Shiitake mushrooms Sliced
- 2 tsp Green onions Diced
- 2 tsp Cilantro Rough chopped
- 2 leaves Basil Chiffonade
- 2 tbsp Fish Sauce
- 3 slices Ginger
- 1 tbsp garlic Diced
- 1/2 Lemon

- Start by gathering up all your ingredients and get everything chopped, diced and sliced.
- Make sure to drain excess water from the tofu before cutting and wash and cut the bottoms off of the mushrooms.
- Grab a saucepan and pour in a little olive oil. Add the chopped garlic, tofu and shrooms.
- When the tofu and mushrooms get golden brown pour everything in the saucepan into a separate bowl and drizzle over some fish sauce.
- Grab a pot and your bag of Fortune Noodle Udon and follow the instructions on the back of the bag. Make sure to add some sliced ginger, freshly cracked pepper and garlic powder to the water for extra flavor.
- Get out your favorite noodle bowl and start by filling the bottom of the bowl with napa cabbage. Add the cooked Fortune Noodle Udon soup. Add a few spoonfuls of the tofu/mushroom mix, top with green onions, cilantro and basil. Squeeze some lemon on top and drizzle with more fish sauce.
