I may not be Asian but I sure love eating it! Japanese, Chinese, Vietnamese and, of course, Thai food! But how do you find the perfect balance between taste and a slim waste line? GET SAUCY!
I find when I am hungry I want a sweet or salty fix. Fortunately, there are healthy ways to satisfy any craving with gourmet, tasty and unassuming ingredients. The key is to acknowledge your craving with a creative solution.
Here’s a recipe for Lusciously Lean Veggie Thai Lettuce Wraps:
1 cup of chopped mushrooms
1 cup of chopped white onion
1/2 cup of shredded carrots
2 cups of shredded cabbage
1/2 cup of diced almonds
1 head iceberg lettuce
1/2 bunch of green onion
2 small Persian cucumbers sliced
1/4 cup of ‘Soyaki’ Teriaki sauce
Trader Joes Peanut Sauce
Trader Joes Sweet Chili Sauce
3 Tblsp White Rice Vinegar
2 Tblsp. Trader Joes Grape Seed Oil
1 sliced lime Oil a frying pan with Trader Joes Grape Seed Oil on medium heat.
Place mushrooms, onions and carrots into the pan and Stir Fry until soft.
Add Trader Joes ‘Soyaki’ Teriaki to the Stir Fry. Simmer for 10 minutes.
In a separate bowl: Sauté sliced cucumbers in white rice vinegar.
In a separate bowl: mix shredded cabbage, diced green onion and sliced almonds. Wash and separate lettuce leaves from head, leave to the side.
Instructions: Add one heaping spoonful of stir-fry into one iceberg lettuce leave. Put a handful of cabbage mix on top of stir-fry. Add Trader Joes Peanut Sauce and/or Sweet Chili Sauce on top for taste. Squeeze slice of lime over the open wrap. Wrap the lettuce around the mixture and enjoy!
Makes 6-8 wraps for 2 people.
