I love having quiet time to envision an idea that allows the creation of something beautiful and yummy. Cooking is such an artistic outlet for me. Not to mention extremely relaxing, creative and rewarding. I told my friend Aaron months ago that I would make his birthday cake this year. I wanted to make a 3 tier white cake with periwinkle colored frosting, white accents and a pair of shiny plastic red heels and tiara on top. I definitely envision pretty cakes more-so than I can actually make yummy cakes. ha ha ha. Two days before his big day I get a call from his boyfriend telling me that the cake needs to be gluten free. WHAT? GLUTEN FREE? I started googling. I practically live off coffee and don’t have eating restrictions so I had no idea what a gluten free diet was. I also do not bake for a living and now this bday project has just become work and since I had another event to cater the same day as his birthday I had to keep telling myself…. simplify Kimlai…..simplify…take some quite time-an idea will come! I gave it a rest and woke up the next morning with an idea. I took a plain cheesecake (cause google told me cheesecake was gluten free..ha ha ha) and made a princess cake for my princess. This cheesecake was a perfect example of taking something plain and dressing it up a bit and turning it into fabulous!
