It’s been a bit chilly lately (anything under 65 degrees is chilly to me) and I’ve been craving something warm and comforting to drink. I remembered one time when I was under the weather my neighbor brought over this amazing hot honey lemon water that was sooooo good. It was sweet, filled with lots of pulp and had just the right amount of sour. I always seem to have an abundance of lemons so I wanted to recreate that particular drink. After a few attempts, I figured out a good mix LOL! And as a result, I’ve had a saucepan filled with this goodness everyday for over a month. Since then I’ve done a bit of research and found out that “this lemony drink” is really good for you and it was recommended on a lot of healthy sites to start your mornings with a cup of warm lemon juice. Why? Because it stimulates your liver, helps aids in digestion and is an immunity booster. WHICH IS SOMETHING WE ALL NEED RIGHT NOW. Lemons and lemon peel are ridiculously loaded with vitamin C, potassium, magnesium and so much more.
5-6 lemons are good for a medium-sized saucepan. Since you are going to consume the juice and some of the peel you want to make sure to really wash the outside of the lemon. I’ve been using a fruit/veggie wash for everything especially after I watched a video on what stays on the fruit or veggie even after it’s been rinsed in water. Water is not enough!
Cut the lemons in half, squeeze the juice into the pan and then put the peel in the pan too. Fill the pan to the top with water, bring to a boil then simmer for up to an hour. Then use the back of a ladle and squish the lemons releasing the pulp and peel.
Grab your cup, put a teaspoon of your favorite sweetener inside then pour in some hot lemon juice. SO GOOD! You can also squeeze in a few extra squirts of lemon juice and slice up some peel for an extra boost of Vitamin C. You can put a lid on the pan and just leave it on the stove. When you’re ready for another cup just heat it back up.
