I had no idea that gnocchi could be so simple to make, could be so tasty and is actually quite healthy. Clearly I’ve never had Chef Fabio’s recipe. I also thought gnocchi was pasta with potato filling so imagine my surprise that the two are combined ey yi yi.

Having the opportunity to spend an afternoon with Chef Fabio at Bettolino’s Kitchen whipping up one of his classic pasta recipes was perfection.
There are a few key things to keep in mind when making this simple recipe.
Don’t over mash the potatoes.
Use the freshest tomatoes possible, preferably heirloom tomatoes, because the juice is so important.
Use a fork to shape
and don’t over cook the pasta.

Ingredients for 2 portions
8 oz. mashed russet potatoes
1 oz. parmesan cheese, grated
1 egg yolk
dash of salt
2.7 oz. all purpose flour
Fresh tomato sauce ingredients
1 ripe heirloom tomato
1 minced garlic
5 basil leaves
dash of salt (make sure the watch video for when to add the salt)
1 oz. evoo
