Check out this super simple, super tasty egg recipe. My dad was in town visiting and wanted eggs for breakfast (original). I wanted to come up with something that had a bit more nutrition and color than regular toast and eggs plus I was out of toast and only had bell peppers, eggs and mint in the fridge. Pretty pleased with the end result and pretty full with the process to get there. Happy Eating!
Here’s what you’ll need:
•Bell peppers
•Eggs
•Salt and pepper
•Mint
Clean out the bell peppers and cut 1/2 inch thick slices
Place the slices into the frying pan with a bit of olive oil and let them sizzle for a bit
Then you’re gonna crack open an egg and place it inside the bell pepper slice. One egg per slice. If you try and add two eggs cause maybe you are super hungry..DONT! the eggs won’t fit.
Add your salt and pepper and let each side cook for a few minutes.
Plate up these bad boys, garnish and EAT!
