Do you guys remember fruit leather? aka fruit rolls or fruit roll-ups or fruit by the foot. I remember loving it as a kid and thinking it was such a healthy treat. I’m sure my mom thought so too since the word “fruit” was in it. I LOVED every single flavor …. except 🍑 peach. ICYMI there’s a fun TikTok trend using fruit by the foot and if anyone wants to do a challenge I’m totally game. Anyways – now they have crazy, creative & fun flavors but they are loaded with so much sugar. I teamed up with Cape Cod Select Premium Cranberries to create a fun, healthy, on the go snack. The very first thing that came to mind to make was cranberry fruit leather.
What I love about diy fruit leather is that you control the sugar, you control what flavors to add and you control whether or not you want to share LOL! They’re addicting, fun to eat plus super healthy and a great on the go fruit snack. This particular flavor is loaded with antioxidants. Cranberries have polyphenols which makes them a super fruit.

- 4 cups Cape Cod Select Cranberries
- 1/2 cup water
- 1 inch ginger (peeled and sliced)
- 1/2 lemon (juiced)
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp ginger powder
- 1/4 cup sugar I used Soviia powdered agave
- pinch chili powder Totally optional
Ingredients

- Combine the first 3 ingredients together in a saucepan and bring to a boil then simmer on low for 10 minutes uncovered.
- Then use an immersion blender and mash up the cranberry mix
- Add the sugar, spices and lemon and stir together. Simmer on the stove for a few more minutes so all the flavors can fully combine.
- Then put the cranberry mix into a blender and puree until smooth.
- Line a baking sheet with parchment paper and spread the cranberry mix out evenly.
- Bake at 170 for 5 hours. After 5 hours check on the fruit leather. If it's still sticky then back for another 30 minutes. Don't overbake because it'll become fruit paper instead of fruit leather 🙂
