Are you guys ready for a sweet and savory out of the box recipe? I’ve recently become familiar with Stone Wall Kitchen’s pancake mix so when I saw the cornbread mix during my weekly grocery shopping spree at *Milk and Eggs, I had to have it. I really enjoy a good cornbread and thought, let me come up with something creative and fun that makes cornbread the star of the show and not a side. This one’s a tasty winner and I’m lovingly calling them CORNY CAKES!
The cupcake size is great if you want to serve 2-3 corny cakes per person but after testing and exceeding the appropriate portion amount hahaha, I would recommend using a muffin tin and making one big muffin filled corny cake per person. These corny cakes are easy to make and you can always play with ingredients for the sloppy joe mix. I like incorporating Asian flavors wherever I can and that’s not just because I’m half Vietnamese but I have a fridge and pantry full of spicy sweet sauces, so I used hoisin sauce mixed with some of the ketchup to make the sloppy joe sauce. Again, play with your food and experiment with different flavors. The only thing that can go wrong is you have to make another batch.

- 1 lb ground turkey
- 1/2 chopped onion
- 2 tbsp ketchup
- 2 tbsp hoisin sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp thyme
- 1 box Stonewall Kitchen Cornbread Mix you can also make cornbread from scratch or use your favorite mix
- 1/2 cup shredded cheese
- 1/2 tsp green onion

- Grab ingredients
- Mix cornbread mixture using instruction on the back of the box
- To make the cupcakes you need to use a cupcake pan. Make sure to grease pan first or use liners, then pour the cornbread mix into the pan. Fill up to the top.
- Saute the onions until they become translucent. Then add the ground turkey. Cook until it's not pink. The add the salt, pepper, thyme and the ketchup and hoisin. Cook until the turkey is done.
- Once the cornbread cupcakes are done cooking let them cool for just a few minutes. Then take a pairing knife and cut a hole in the top.
- Remove the top. The deeper the hole the more area to fill. Make sure to not cut through the bottom.
- Fill up the cupcake holes with turkey sloppy joe mix and then top with shredded cheese and green onions.
