This cauliflower mash has the consistency and tastes just like traditional mashed potatoes. I’m going to take you step by step through the process of making Cauliflower and Bacon Mashed Potatoes. This is a tasty alternative to mashed potatoes plus it’s a great way to get your daily veggie intake. SCORE!

Ingredients
- 1 head cauliflower
- 2 tablespoons butter
- 8 ounces bacon
- 4 cloves garlic
- 2 stems green onion
- 1/2 cup shredded cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Instructions
- Line a baking sheet with aluminum foil and lay out the strip of bacon. Put it in the oven and turn the stove to 400 degrees. Once it reaches 400 let the bacon cook an additional 10 minutes.
- Take the head of cauliflower, cut into fours and remove the center core. Place the cauliflower flowers into a steam pot and steam for 20-30 minutes, or until soft.
- While everyting is cookin go ahead a chop up the green onions and the garlic cloves.
- Take the cauliflower off the stove, discard the water from the pan and let the cauliflower cool off for a bit. Then add the butter and garlic and using your immersion blender mix the three ingredients until you get the consitency you like.
- Bacon should be done now. Chop up the bacon and fold in the bacon and chives into the cauliflower mash.
- Plate up the goodness. Top with shredded cheese, bacon and chives. EAT!
