Hi guys! I’ve got a fun recipe for you and a new video to go with it on my youtube channel CHOMP ON THIS. I love banana bread but I’m sure all of you, like me, have that recipe that was handed down years ago and while it’s always been good it has potential to be better. It’s time to turn that banana bread recipe into the bangin banana bread recipe it was meant to be. There are a gazillion recipes out there for banana bread but these tips will elevate your already amazing banana bread recipe to another flavor level. If you don’t have a recipe, feel free to grab mine. It’s tasty!
TIP 1 We’re going to brown (cook) the butter. Cooking butter brings out a nutty, toasted, rich, savory flavor. Just start the stove on medium heat so you don’t burn the butter.
TIP 2 we’re going to substitute refined sugar for brown sugar. There’s no difference in sweetness but brown sugar has a bit of molasses in it and it helps keep the bread moist.
And Tip 3 TOPPINGS!!!!! You can get really creative with tasty toppings. Today I’m adding coconut and panko flakes to the top layer.
So let’s get baking. Here are the ingredients.
DRY INGREDIENTS
1 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 cups of all purpose flour
WET INGREDIENTS
4 mature bananas
1 stick of butter (1/2 cup)
2 eggs
1/2 tsp vanilla
Go ahead and grab two big bowls. One bowl for the dry and one bowl for the wet.
I highly recommend sifting all the dry ingredients so you don’t end up with chunks in your banana bread. It’s only chunks of brown sugar btw but sifting allows all the dry ingredients to incorporate with each other and the result is a really nice blend of fluffy dry ingredients.
Once you get everything mixed combine the two bowls. Just put the wet into the dry and mix gently.
Line a loaf pan with parchment paper or grease a loaf pan and filler up. Don’t forget to add some creative toppings.
I topped this one with panko crumbs and coconut flakes. I LOVE COCONUT!
