When the inside of an apple looks is this gorgeous I had no choice but to capitalize on its beauty.
In this recipe, I used the weirdly colored and sometimes hard to find Hidden Rose Apple. It was discovered in the Pacific Northwest in the 60’s however I discovered it because of the folks at Melissas Produce. It looks like a regular reddish-green apple on the outside but when you open it up it has a gorgeous fushia colored flesh. The apple noodle bowl is served in a coconut shell but you can serve it in a bowl or a parfait cup. It’s layered with greek yogurt, apple noodles, pomegranates and wait for it……ROASTED AND SPICED NUTS. It’s not only a gorgeous dish, but it’s also refreshing and healthy.

- 2 Hidden Rose Apples
- 1 cup pomegranate seeds
- 2 cups Greek Yogurt
- 1 cup Roasted and Spiced Nuts
Ingredients

- Grab all your ingredients and lay them out on in your prep area.
- Use a spiralizer and make noodles with the apples
- Start laying in your coconut bowl or serving dish starting with the yogurt
- Add a handful of apple noodles
- Add pomegranate seeds
- Add Roasted and Spiced nuts
This recipe is totally customizable. Switch out the greek yogurt for labne or vanilla yogurt. Swap out the pomegranate for blueberries or grapes. Swap out the Roasted and Spiced nuts with granola or cocoa nibs and coconut flakes. So many options.
