There are two ways to make pancakes, from scratch or from a box mix. Box mix sounds so bad, like a generic hair color, so from here on out I’ll just call it pre-made mix. The ingredients (depending on the brand) can be similar but for me, it comes down to what ingredients I have in the pantry that day and because of that I always like to keep a pre-made mix as a back up in case I run out of baking powder and sugar to make a batch from scratch. Pancakes are just delicious and always a favorite to put on a “brunch with friends” menu. Who wouldn’t love a platter of pancakes? And some bubbles.
Today I’m trying out a pre-made mix from Stonewall Kitchen called Farmhouse Pancake and Waffle Mix that I picked up over at MilkandEggs.com. The mix is super light and smells like vanilla. Some mixes require you to add water but this one requires an egg, milk and butter which is probably why it tastes so damn good. I really like the versatility of pancakes, you can make big ones, little ones, thin ones, fat ones and the topping options are endless. Oh another idea, a pancake bar where you serve pancakes and then have an endless amount of topping options. Okay, back to the pancakes I’m making today. I put together a pancake platter, topped with blueberries, strawberry roses and a side of Hip Chick Farms Chicken & Apple sausage patties (all from Milk and Eggs) and since it’s the main attraction it’ll go in the center of the table and served family style. I also think it’s always a fabulous idea to add an unexpected element so I added a few rose carved strawberries. I hope the pictures below make you hungry and inspire you to create your own amazing pancake platters.
TIPS: Add cinnamon or nutmeg and some almond or vanilla extract to the mix

TIPS : Pancakes freeze really really well. So bundle up the leftovers into a ziplock and don’t forget to write the date on the bag.
TOPPING OPTIONS: maple syrup, jellies, peanut butter, powdered sugar…..you can even make super thin pancakes and layer with peanut butter and jelly for creative p&b sandwiches.
