Cauliflower Fried Rice | Recipe

CAULIFLOWER FRIED RICE!!! Yes you read that correctly. OMG this is so delicious and such a tasty healthy alternative if you are laying off starchy carbs. It actually tastes like fried rice. I made huge platter of paprika chicken for a dinner party and the cauliflower fried rice was a great base on the dinner plate to put the chicken onto plus it soaked up the paprika juice really nicely.

RECIPE:

You want to chop up the cauliflower into small pieces and pulse in the food processor until you get a rice like consistency.

In a frying pan melt some ghee, add some green onions and saute for 3 min.


Add the cauliflower to the frying pan along with Himalayan salt and let it cook for 5 min. You want the cauliflower to brown up a bit.

Make a circle in middle of the cauliflower mixture and crack an egg in it.

Scramble everything together and add soy sauce

***I forgot to take step by step pics but I will definitely take them and post the next time I make this dish***
